Recipe: Smoked Pork Nachos
Smoked pork shoulder is one of my favorite meats to smoke and also one of the most delicious.
Ingredients
Pork shoulder
Mustard
BBQ seasoning
Tortilla chips and nacho toppings of your choice
Smoked Pork Shoulder Cook
1. Start by brushing your pork shoulder with mustard on each side. Make sure it is entirely covered with mustard as a binder for your seasoning. Once it is covered with mustard, season your pork with a barbecue seasoning of your choice.
2. Total smoke time for your pork shoulder with vary by size but you can plan on 18-20 hours ish. I like to put my smoker on the lowest temperature (90 degrees) overnight and then turn it up to 225 when I wake up in the morning. Check the pork every hour or so to make sure a nice bark is developing.
3. Your pork will be done once you reach an internal temperature of 195-200 degrees. Once it is finished, you will want to rest it for at least one hour. Wrap it with some butter in tin foil and place in a cooler so it contains the temperature and moisture.
4. After you rest the meat, you are ready to shred and assemble your nachos. Nachos can be assembled in many different kinds of ways so I will leave that up to you on how you like your nachos served!

Beer of the Week: Space Dust IPA from Elysian Brewing
Space Dust is a delicious IPA. It balances bitterness and sweetness. It has delicious notes of grapefruit, orange and mango but still has a bitter/dry refreshing crisp finish. With an ABV of 8.2%, it is on the heavier side and perfect to wash down your nachos with.
Prop Bet of the Week: Michigan Moneyline at +120
This isn't exactly a prop bet, but the value is too good to pass up. I like Michigan's chances to go to USC and come out with a win, and with those odds, you have to jump on it. I think this is going to be a very difficult game to win, but one that Michigan is certainly capable of winning. The key side of the ball in this game is going to be the USC offense vs the Michigan defense. I think Michigan makes enough stops when they need them, combined with the offense hitting on some big plays, and the Wolverines leave Southern California with a win.
