Recipe: Smoked Ribs
A night game calls for a recipe that you can cook all day as you get ready for kickoff. Smoked ribs are one of my favorites and when they are done right, they are delicious. We have a simple recipe to follow that will produce tender and delicious ribs.
Ingredients:
St. Louis style or baby back ribs, barbecue sauce, salt, pepper, mustard, barbecue seasoning, butter, brown sugar.
We are going to use to 3-2-1 method for smoking these ribs. Heat up your smoker to 225 degrees prior to putting the ribs in. If the ribs still have a membrane on them, you will want to remove that. Next, brush a layer of mustard onto the ribs and then add your barbecue seasoning of your choice. Now, comes the 3 portion of the cooking method. Put your ribs into the smoker for 3 hours uncovered and let all that smoke get into the meat. After three hours, take your ribs out and wrap them in butcher paper. You can also use foil but I prefer butcher paper as it will increase the bark on your ribs. Cut up a stick of butter and sprinkle brown sugar onto the ribs before wrapping them. Next, is the 2 portion of the cook as you will leave them in the smoker for two hours wrapped. After two hours, take the ribs out and add your favorite barbecue sauce. This is the 1 portion of the cook as you will finish by smoking them uncovered with sauce on for one hour. Ribs are ready to eat when they have an internal temperature of 200 degrees. If you do not have a meat thermometer, you will want to make sure bones are sticking out on each side. You can also do the bend test, which is when you pick up the ribs, they should bend on each side as a sign of being tender and ready to eat. Pair with coleslaw and cornbread and you are ready to eat.

Beer of the Week: Sam Adams Octoberfest Ale
It is the last game in the month of October, so it is only right that we are drinking an Octoberfest beer. Sam Adams is a rich, golden amber beer with an ABV of 5.3%. This is a delicious beer to drink while preparing the ribs and then while eating and watching the game.
Prop Bet of the Week: Bryce Underwood over 28 rushing yards at -122
Bryce Underwood has grown up with an extreme familiarity with this rivalry, being raised in Michigan. He has stated that he knows how much this means to the University and to the state as a whole. I think Bryce is somebody who will elevate his game in the biggest moments. Michigan places an extra importance on this rivalry game, and it is a game in which they will hold nothing back. Part of holding nothing back means using designed runs for Bryce. I also think Michigan State is going to try to pressure him in the pass game, and if they don't get home, look for Bryce to break a long one. Designed runs and scrambles will put Bryce over 28 rush yards for the game and help Michigan keep Paul Bunyan home for another year.
