Recipe: Green Chile Cheeseburgers

Ingredients

Queso: 1 tbsp each butter and flour, 1 cup milk, 12 oz Monterey Jack, ¼ cup Parmesan, salt and pepper.

Relish: 1 poblano, 2 Hatch chiles and 1 serrano—roasted and sliced; ¼ cup red-wine vinegar, 1 tbsp honey, 2 tbsp olive oil, 3 tbsp cilantro.

Onions: 1 sliced red onion, 1½ cups red-wine vinegar, ¼ cup water, 2 tbsp sugar, 1 tbsp salt.

Burgers: 1½ lb ground beef, 1 tbsp oil, 4 toasted buns, 12 crushed tortilla chips.

Directions

1. Pickle onions: Boil vinegar, water, sugar and salt. Pour over onions; chill at least 4 hours.

2. Make queso: Cook butter and flour 1 minute. Whisk in milk until thickened. Melt in cheeses; season.

3. Mix relish: Combine all relish ingredients; season.

4. Grill burgers: Form four patties, season with salt and pepper and grill until cooked as desired.

5. Assemble: Layer buns, burgers, queso, relish, onions and crushed chips.

Beer of the week

Zombie Dust APA. Zombie Dust is a delicious APA with an ABV of 6.5%. Zombie Dust comes from Three Floyd's Brewing Company in Munster, Indiana. It has notes of heavy citrus, grapefruit, tangerine and pine resin. All of these flavors combine for a sharp, hop bitterness finish that will make you wanting to come back for more. A couple of these paired with your Green Chile Cheeseburger will be delicious.

Prop bets of the week

We have three prop bets for you this week and they are all courtesy of the Michigan backfield.

The first one is Jordan Marshall over 100 yards at -123. The second bet is Savion Hiter over 50 yards at -118. Lastly, we are looking to get paid with somewhat of a long shot by putting down on Marshall and Hiter to combine for three or more touchdowns at +245.

The forecast is calling for rain during much of the game tomorrow. There may be a small window at the end of the first half and the start of the second half with no rain, but it is going to be wet most of the day.

A lot of the talk from the fans and also Coach Whittingham this week has been that the run game has been too much East/West and not enough North/South. I think we see Michigan football take advantage of UTEP on the line of scrimmage tomorrow and run the ball at them early and often. Both backs should each get 10+ carries tomorrow. One or both will break one long, and I think they both hit the over on these rushing marks and find the end zone 3+ times. Go Blue!
